Which mini for which role?

I've got two Mac minis and two roles to fill and looking for opinions on which is better suited for which

one is a base m1 and the other is a base i3 2018

the roles:

1) office work. quickbooks, sharepoint, excel, word, web and email

2) home server. Time Machine back ups and plex server (plex is local home network only) hooked up to four bay drive enclosure

which would you use where?

I'm thinking the m1 will be snappier with lots of safari tabs and window for work and the 2018 should be good enough for my server needs?

Being a server for a few other devices isn't that much work. (Most NAS boxes come with very low-spec hardware, for example.)

Your work requirements are also pretty light: but it always makes sense to use the newest machine for work, as the 2018 Mini can't run Tahoe.
