Came with Snow Leopard installed, some things cannot be updated.

Justing curious what option would be best? Should I go Mevericks? Is El Capitain too much for it?

I'm clueless!

Also what would be the best way to go about doing so?

It's a refurbished Late 2008 13" Macbook aluminium body 1TB hdd 8gb RAM 2GHz intel core duo.
 
Your system's good enough to run El Capitan which is the highest it can go. Just make sure you've got the latest version of Snow Leopard installed, and then you can access the App Store and install El Cap.
