Just purchased an Apple Magnetic Charging Dock for my Series 6 Apple Watch. I remember reading possibilities of fast charging on the Series 6, but I didn't know if it's all internal or if it requires a special adapter. I am currently using an Apple 5w Adapter I had laying around, but should I switch it out for a usb-c 18w charger instead?

It seems someone somewhere took Apple's mention of 20% faster charging and morphed it into "fast charging".
We're talking a ~1watt-hour battery. It doesn't need much juice even at a 20% increased charge rate.
Someone here measured their S6 watch charging and it was using a maximum of about 3 watts.
Thus - any 5W or better USB-A source will do just fine, and you (likely) will see no difference if you use a 12W or 18W source instead.

You’d need to buy a USB-C charging cable for the watch in order to use the 18W charger.
You should be able to also use a USBC male to USBA female dongle. Watch puck won't draw enough current to matter whether it can negotiate power-delivery.
The Magnetic Charging Dock has a lightning port and I already have a USB-C to Lightning Cable and an 18w adapter for my iPhone.
