Maybe this is too simple for a Google result, but I can't find out why anywhere... for a long time (and a previous version of Apple watch too) I have been able to swipe up from the bottom of the watch screen, and one of the items on the screen of options was to make my iPhone make a sound so I could locate it. I don't remember the other options, because I never used them, but it was a page of options that included (I think) making the water clearing sound, airport mode, and for sure to locate iPhone.

I no longer can swipe up from the bottom of the normal display screen... at all, to get any other screen. Is this something that changed with a software update, or is there a setting that I undid that I don't realize? I've looked on the Apple watch, the Apple watch app on my iPhone, and Google, and I can't find anything about this or the change anywhere... I'm hoping someone here knows what I'm talking about and what might have changed.

What exactly do you get then when you swipe up?

You should get something like this (I do) along with lots of other options :

Swipe up works on my Series 6 WatchOS 8.5 - have you tried a reboot of the watch (or shut down, restart)
 
Swiping up on an AW reveals the Control Center which you can edit to include the "Ping my Phone" icon
