Why Apple made it dificult to upgrade the iMac HDD? Is the MacMini also affected? And, will this happen to all lineup?

Why chips in HDD?

The Mac mini is not affected. Maybe with the 2012 upgrades it might be more difficult.
As the HDD in the iMac is not really user upgradeable to begin with, though I did it twice already with my 2007 iMac, I don't know what Apple thought with the 2011 iMac. But as SJ liked a computer with no user replaceable parts, though RAM is different I guess, the 2011 iMac is more to his liking.
