I saw it earlier that they switched in iOS11 back to a single pane view on iPads as well which isn't user friendly at all.
I love the two pane view on my iPad mini2 for this and another thing (Settings launchers in Launcher widget) I will stick to iOS10 for a bit longer.

Nobody used the two pane view 99% of the time. I'm happy they've got rid of it in iOS 11.
That's a pretty sweeping generalisation and it's wrong. I used it 100% of the time I went into that part of the iPad. What you probably meant was 'you' didn't use it 99% of the time. Doesn't mean Apple need to get rid of it. Means they should have put the option there to have singe or two pane views.

I will never understand why software developers take away or change a feature like this instead of just turning it into an option. (And it isn't just Apple.)

Two pane view was one of the first things I checked on my iPad every morning. News, weather, traffic, stocks, etc.

Fair enough, but Apple wouldn't have got rid of it if a lot of people were still using it.

There are so many amazing iPad enhancements in iOS 11 that people should be focusing on here.

I think (and it's just my guess) that it was an attempt to unify the look and feel between iPhone and iPad but, if so, I think a misguided one. A) because iPad is not an iPhone in form and B) because iPad has never diverged so much in other places from iPhone (dock, multitasking etc.) so it's a strange time to pick on this.

In any case, it's an incredibly minor nitpick (IMO) and it has in fact let me lay out my widgets the same on both, aiding muscle memory a bit. I'm pretty ambivalent on this one.

I'm very annoyed this was removed from iPad. The two columns of information was helpful and I liked how the time/date was off-centered.
