Genuinely wondering (I'm sure this has been asked before).

Because without changing the dimensions of the phone that would result in less screen.

This is all a mater of "is the glass Half full or half empty?" For some reason the internet is filled with pessimists, that see the glass as half empty. Meaning they see the notch as some how subtracting from the display. The way I see it , the glass half full. Because of the notch, there is more display for me to see / use. It is an addition, not a subtraction.
 
Maybe I am an odd duck... but I sort of like the notch myself and after just using the phone a little over 24 hours I forget its there.
I didn't say it was a bad or good thing as I personally have never owned an X or Xs, but there is some criticism. Seems like a no brainer.

Seems these days everything Apple does there will be those folks that criticize. My thing is get what works for me and don't worry about all these folks. The only real opinion that matters is mine since I am the one that shelled out the cash for it. :)

Probably a mix of confidence that both the screens around the notch would get bigger, wasting more potential screen if they didn't embrace the notch (XS Max, Rumoured next iPad) and - in future iterations - that the notch itself might shrink as the tech matures.

I think the notch is an inventive idea considering what they needed the phone to do, but when apps don’t utilize the notch correctly, it looks bad. My boss showed me PUBG on his Xs Max and it looked great in terms of picture quality, but it wasn’t formatted properly for the screen dimensions. It cut things off in the rounded corners and the notch literally covered information on the screen. But I’m sure most apps use it better.
 
It would look nicer had there been no bezels around the edges with just the top bezel visible, but the Iphone x/xs has some thin bezels around the phone and is not completely bezeless.

I prefer the notch as it gives a more immersive effect with the smaller bezels on the top corners. Comparing to my friend’s Note 9 with same sized screen, but a forehead and chin, the Max is just a better experience. Apple knows what they are doing. There is something psychological to watching a movie with the thin bezels all around and rounded corners. It makes the viewing experience more immersive. Do you agree? I remember Apple discussing this blending of software and hardware when they launched the X. It really does work well.

I'd prefer the top of the screen be black and continue to be utilized similarly to the black bar from the pre-notch days, but a bit taller. They didn't ask me, though.
