I have to hold down option to make the two options appear, if I don't it goes automatically to windows...Is there a way to change this?

    While in OS X:
Preferences -> Startup Disk -> Macintosh HD

    In XP:
Start -> Control Panel -> Performance & Maintenance -> Boot Camp -> Startup Disk -> Mactintosh HD

Not sure about Vista. I went back to XP a while ago, but it's somewhere in the Control Panel.

And you can have a nice user interface to choose which OS to bootup with using BootPicker :)
