It seems like all of their update releases, and keynotes are always at 10am their time. Any reason for this? They sure like that time, and I am sure it makes sense - just curious if they had any reasoning.

Because Steve had its first soya latte delivered at 10 AM every morning.
 
Because Apple is based on the West Coast of the US. 10AM is a very convenient time, everyone is at work. If something goes wrong, the whole team is in the office to help fix it maybe?

If they released something at midnight, their employee teams would all be sleeping and if something went wrong it would suck til the morning.

This. Give everyone enough time to get work and allows most of the day to be devoted to issues should any arise.
