open Image Capture, and go into it's preferences. there's a drop down box for what you want done when a camera is connected.
 
If you 'save' any photos on your Touch, which you can do either by taking a screen shot or by saving photos from e-mails (both new functions with 2.0), then your computer will import those photos to iPhoto when you sync your iPod.

What I've noticed though, is that once I've sync-ed the photos back to iPhoto, but leave them on the iPod, the computer asks me again if I want to import them to iPhoto the next time I sync. Shouldn't it just do this the first time, then not try/need to sync/import them again?
