I don't get it, why does the iphone 12 charge wirelessly at 15w only with the magsafe charger? What do the magnets have to do with charging speeds?

The magnets don't affect the charging rate. They only serve to attach and align the puck.
 
Revenue Management... Apple has a "Made for iPhone" business interest to protect.
 
To make more money! They will open it up later on down the road but only after the masses purchase theirs. See at first everyone “has” to buy their chargers. And everyone who doesn’t own an iPhone 11 has to buy a charging brick now.
Only apple chargers will charge at 15w everything else 7.5w

That's just not true. If the phone is not centered on the charger correctly, whether MagSafe or Qi, then the phone will not charge. Just like plugging in a cable to your phone, there is a hand shake that has to occur before the the charging will proceed. If the phone is not line up properly over the coils then no charging takes place (so your battery and phone will not be harmed be misalignment).
