Apple gets a lot of stuff right but they make the easy stuff unnecessarily complicated, it's so annoying. I just did a backup of my 6 in iTunes and when I restored my 6S from backup none of the contacts were there. Why the hell can't I have my contacts saved on both my phone and iCloud??

Hmmm to be honest you only named one issue. I have been on Android and iPhone and apple backup restore is leap years ahead of Android and I'm typing from a Samsung Galaxy s8 plus. I'm not getting what you mean as to how bad apple have it when it comes to backing up and restoring
 
I've restored each of my iPhones from a backup of the previous, and always had all the same content appear on the new phone, except for music which I had to re-sync from my iTunes library. I've never lost any contacts as far as I can tell.
