I could possibly understand the champagne anodization being tough to pull off or something, but the white/silver one is aesthetically nearly exactly the same, save for that sensor.

So why is this the limited/not available one?

Just curious, I don't care of course because I'll being sticking with my 5 but..

This is what I'm reading/hearing.

b/c supplies are already constrained, and historically black is the most popular iPhone color.

Is this really the case though? So constrained that there are NONE? Certainly there's a lot more demand than no demand for the white ones and this champagne color in particular that people seem to be changing their minds about ("it looks so ugly" to "its actually not bad")

Anecdotally, I see a lot more white iPhones.

white is the new black,
 
if you check with the poll in this thread, most people want the black "space grey" as well.

Last year there wern't enough, so everyone complained. Apple made sure to skew it this year so there would be enough black, because everyone wants one.
