macOS 10.15 Catalina split iTunes essentially into 3 apps, Music, TV, and Podcasts with Finder picking up device syncing duties.

Depending on what you wanted to do with iTunes you'll have to use one of those options. Devices plugged in will pop up in Finder's sidebar for you to deal with.

Apple announced the demise of iTunes at WWDC last year (early June 2019) and media outlets including MacRumors dutifully reported it:

This is not a recent development.
 
Its been replaced by the Music app, which isn't as bad as some feared, but still seems a wee bit on the buggy side.
 
I still think it was a foolish move to outright kill iTunes. Instead of trying to slim down the existing app and make it more stable and slick, they just smash it into smaller pieces.

I liked iTunes years ago. It was easy enough and fun to engage. Around the time they dropped the "jukebox view," is when it started becoming a touch annoying. I didn't use the jukebox view but I do recall that was the time Apple seemed to forget that the user experience is not just their own insistence of what we want but a fair measure of actual experiences to help them with future design. I don't care if they separate the apps but no reason for it if they were a bit more 'in tune' with user expectations.
