Doesn't this make the most sense as people willing to spring for a Fusion Drive are likely to have lots of things on their computers, and more likely be using them in a professional environment?

If you are a professional who wants to store lots of things on SSD, then doing it as a Fusion drive probably isn't really what you want, since that gives you no control over what goes where.

As others have suggested an external Thunderbolt drive bay would probably suit your purposes better. Then you could pick and choose exactly what goes on those drives (for example all of your video editing projects) without the Fusion software interfering.
