I really love the colored Smart Covers, currently I'm using a yellow one for my iPad Air. It really bothers me that Apple made just one Smart Keyboard for the iPad Pro (in black). Why no colored ones? It'd look awesome!
I think because it's supposed to be a pro device the charcoal is considered a pro colour. In addition the keyboard is designed to come into contact with your hands a lot, and hands tend to be dirty so I would guess they wanted a colour that won't show all the first.

I think the keys should stay the color they are but the back of the keyboard should have colors to match the apple silicone cases so when it's all closed up it matches.
I think Apple wants to play safe with the colour and black is the safest colour for professionals. When there is enough demand and complaints, they will start making different colours. Also this is the "improvements" when 2nd gen of 12" iPad Pro comes out. Probably they will gauge the demand by also looking at how well those keyboards sell in 9.7" iPad Pro.
I ordered a 9.7" Pro and Pencil for my daughter but haven't bought a case yet because of this. I would have bought a Product Red keyboard and case if they sold them. I'm undecided what to get now since I'm sure she would like something with some color to it (would be nice if the solution had a place to hold the pencil as well).
