I don't want to wait 3 hours to sync all of my stupid apps I've collected over 5 years!! What the heck is the deal with this, driving me nuts.
 
Just sync the apps you want. Apple does not force you sync all apps. You don't have to sync any if you don't want. Sync none and just download the ones you want to use if that works better for you.

I only need to wait 2 hours if I need to sync my entire (not really) music library, 50GB. I never encounter the issue of "syncing apps". And iTunes does not "sync apps" anymore since iOS 9.
 
Just leave it to do its thing overnight, and forget about it until you get up.

Perhaps, but I won't. There's a difference between syncing and downloading. don't sync any apps from your computer and just download from the app store on your iPhone the apps you want. Your initial post indicates that you think Apple forces you to sync all the apps you've ever purchased which is not true. If that isn't what you're complaining about, perhaps you can be clearer about what the problem is.
 
In iTunes preferences there are checkboxes where YOU decide what to sync and what not to sync. I have the apps checkbox unchecked and guess what? NO APPS sync.

So, it is indeed possible to sync only music.

I was unable to find an option to only sync music without syncing apps as well. Please explain how you did this.

OP, my mistake, there is no checkbox to uncheck for apps, but there is one for Music, Movies, and TV shows.

The thing is, the only time I every wait for it to sync apps is when I chose to wipe a phone and start over. If you sync daily, the apps won't 'sync' if there are no changes. Wish I had a better answer.
 
Except that it does, of course. What do you think happens if you buy an app through iTunes on your computer? Or restore your phone from a backup?
It appears as though one by one my "imaginary" issues are being proven as real. I feel like we're surrounded by robots programmed to defend Apple at all costs.

If I buy an app through iTunes, nothing will happen in my next sync. But if I restore from backup, apps I have will be downloaded again through App Store.

I downloaded an app via iTunes on the computer a few weeks ago, and synched it to the phone. I'm not sure whether I had to manually tell it to, but it can definitely still do it (iOS 10).

I'm sorry that in 2017 you don't know how iTunes works, but that's out of my control.

It's obviously not very intuitive if I've looked quite a bit and can't seem to figure it out
