I’m just off another 12 hour attempt with the AWU3 but on my walk this morning my sleeve kept pausing the walk or setting a new interval and it got really annoying.
Until you switch, turn on water lock after you start a workout so that doesn't happen. Or wear something on your sleeve to hold it above the watch (e.g. roll up the sleeve a bit) so it's not touching the watch.

I can't imagine why that's happening. The screen requires capacitance to react and your sleeve doesn't have that, does it? I have logged innumerable runs (albeit with an AWU1) and never had that happen.

No idea. It’s not even a particularly tight sleeve or cuff but it happens at least twice in a 3 mile walk, enough to be annoying. I’m aware of the solution given above (turning on water lock) but it’s a faff

It just happened to me today! I use an app called Intervals Pro to signal walk/run intervals (I use the stock workout app to record the workout, so this app is just running in the background, vibrating and making a sound when intervals are over) and went in to the house for a mid-workout bathroom break. While I had the app paused and it was displayed as the active app on my watch, it was mistaking my jacket sleeve's rubbing the watch as I moved my arm as a tap on the screen for workout stats and the watch speaker kept blabbing them out.

That said, it really doesn't happen to me often - I can probably count on one hand over 9 years now how many times it's happened. Early on with my Series 2, I did have a workout ended when this happened.

Roll the sleeve up and hold it up with a rubber band if you have to if water lock is too much of a bother.
 
Long sleeves can touch the display a bit - so in all of long sleeve season, I always just run with water-lock on. With the Ultra series it's really not a problem, as I can use the action button to mark intervals, pause/restart etc.

I have an Ultra and the action button is set to start outdoor walk. So I pick up the stuff I need, put outdoor coat on, get dog leashed, put gloves on , press button, leave house. Putting water lock on disrupts that routine

All you mentioned works just fine with the water lock

Add "press side button, turn on water lock, " before "put gloves on" (or buy gloves which can operate capacitive screens; I use these, and then you can turn water lock on anytime). You can press two buttons to pause a workout and then manually end after exiting water lock with a swipe and press end, or you can "Hey Siri, end the workout" without turning off water lock if you want an exact ending to the workout.

Thanks for the link! I need some gloves like that. Using my Airpods and Siri, it's easy to pause, resume, or stop a workout, but the gloves have to come off for pretty much anything else.
