Wifi dropped 2x last hr on MBP; how's this look?

So these were just two isolated events? I'd set the utility to monitor and read the logs at the time stamp of it dropping the connection.

I don't know, if it's only happened twice. Your readings appear decent, Signal could be stronger but not far off from my line-of-sight 5GHz primary mesh node. The variables of all this are infinite, why I suggested you look at the logs once it drops out. What model MBP? I've already replaced an Airport card once before on mine.
Also, you could run something like NetSpot to check if there's channel interference, just the free version will do.
2020 MBP no M1 tho. Happened once three mos or so ago, then before that I can never remember it dropping since I got it Aug of 20

Thinking, it's just too infrequent to pin it down. Let the Wireless Diagnostics utility monitor in the background and log it.
Myself (if I had AC), I'd let Apple run a hardware test just to have it documented for the future. I've seen all kinds of funky WiFi issues over the years both hardware and software based but I'm also writing this on a 13yr old MBP.
Anecdotally this evening my WiFi died but got resurrected after booting into Safe mode. Not saying my card isn't on the way out but compatibility wise, am seeing more and more software issues disguising as hardware problems. But no surprise given it's age.
You might try running WiFi explorer to look at channel contention. Based on that information you could try changing channels to see if that helps.
