Everytime I connect to my wifi to SSH my phone the 3G kicks in when it goes in "sleep mode"...why is that?

Get Insomnia from Cydia. As soon as the lockscreen comes on, WiFi stops.
Insomnia will keep Wifi active.

Or you could just change Lock timer to "never"...? No extra software needed... Just make sure its docked/ plugged into a charger...

Or use the autolock on/off togle on sbsettings.
