I have two wifi networks in my house, one fibre optic downstairs for business use and upstairs a copper network for everyday use.

I need to be connected to the copper network when upstairs as the fibre network doesn't reach up there, but when I'm downstairs i want to be connected to the fibre network as it has higher download speeds.

Is there a way of prioritising the way my iPhone connects to wifi networks as it would save me purchasing a wireless booster or something similar.

thanks in advance

Unfortunately it doesn't seem like any good manual way of doing it is available.

No, the iPhone won't know if you're upstairs or downstairs to switch wifi networks based on elevation.
You will have to switch wifi connections manually if you'd like.
