I'm wondering if the iGPU will be able to really drive standard desktop usage for 3 4k monitors.

Assuming I don't play video games and I mainly do desktop stuff like web browsing, document editing, coding in simple text editors and terminals. Will I notice any choppiness in typical desktop apps if I have 3 monitors?

Also, should I be able to watch 4k video smoothly?

(I plan to get the hexacore i7 with 32gb ram and 1tb sdd)

Given your criteria, yes, it will work just fine. Even in raw terms it has fill rate to spare in your scenario, and iGPUs have had full H.264/H.265 hardware decode support for a few years now.
