I'm sure the Apple Watch will have a fairly aggressive auto-screen off timer built in.

Probably not much more than 5 or 6 seconds, so it doesn't really matter.

The screen will be off until you raise your arm up to view. Auto off from demos seem to be in the 1-3 second mark for when it gets lowered again.

Probably. It's probably a proximity sensor.
