I love the idea of buying an Airport Extreme router.

Can I connect a USB hard drive and printer to it at the same time ?

Yes it can. Just hook up a USB hub to the port and connect your devices to the hub. This is how I have mine and I have never had a problem. Good luck!

What is the maximum number of USB devices you can connect to the airport extreme? Are just printers and harddrives compatible? If so, does the airport support scanning from multifunction printers?

Apple states that you can "... connect multiple drives and printers using a USB hub...". Whatever the amount is I'm sure someone here knows. As far as the scanner question, I don't have one so I don't have an answer on that either, sorry.
