I nothing about them, though here is how I want to use one.

I want o be able to walk my dog without taking my phone. What can the apple watch do without a phone or when walking somewhere without reception?

How far will one work away from a phone?

Will it read aloud emails and texts? Can you also respond via voice to texts and emaiLs?

If you walk your dog out of wifi range, it's not going to do a whole lot besides log your walk as physical activity.

It will still do Pay without the phone, though.

Get back within range of your phone and it'll have all of its functions. It won't read aloud texts and emails. It will let you dictate texts and replies to emails.

Does it use Bluetooth or Wifi to connect to the phone? What is the distance you can use the watch away from the phone?

It uses Bluetooth as much as possible. Then, if BT is out of range, then it will switch to WiFi if the watch is on a typical home or work WiFi network. (It cannot use most public WiFi network that requires a web page user acceptance.)

BT is rated at about 30' range, so count on it working in the same room, but needing to flip to WiFi if you are in another room in your house.
