That as far as I can push it, and I would agree if the Mac Pro can use any PC Graphic Card it boost the performance tremendously.
You can put a PC graphics card into a Mac Pro and it will work under Windows, just not OS X and pre-boot. You can also do software SLi under Windows.

There was a thread in this section a while ago about someone who installed a 8800 GTX in their Mac Pro.

You could even borrow your friend's gfx card to test it out/check the fps.

So each time you boot into Mac OS X you have to take the Graphic Card out? Can you have 1 ATI X1900 XT and NVidia 8800 at the same time? Have Mac OS X only use the ATI X1900 XT, and have Windows Disable the ATI X1900 XT and use the Nvidia 8800? Doesn't seam like possible. I would love to put a NVidia 8800 in my Mac Pro, but I add an aftermarket cooler that use the Optical Drive molex adapter. Couldn't stand the noise anymore. So it a very painful procedure to take out and put back in each time, not to mention that the the ATI X1900 XT is double wide slot card. I have even heard of NVidia Titan that make NVidia Card work on the Mac OS X? It's not possible with the NVidia 8800?

And yeah I'm pretty sicks of having the modded ATI 1900XT in my Mac Pro. I want the NVidia damnit!
 
Read through THIS thread (don't be put off by the title), there's quite a lot of useful information.

Not sure about whether the Titan driver with an 8800 would work or not, though the answer is probably no.
