Well some bstrd stole my iMac from my home over the weekend. The insurance will replace it.

My question is; if I now plug my iPhone into a new iMac with a virgin copy of iTunes, will iTunes import my contacts (aprox 250), music, photos and Apps from the iPhone or will it erase it all!

Also will the iTunes store let me re-download my music and Apps (aprox $300 worth) bought with my Apple ID?

your contacts and apps would not be a problem. when you plugin your iPhone, it will ask if you want to merge your info. click merge and it will copy your contacts to your new computer but you cant copy music or photos from your iPhone to your computer. As you have purchased apps using your id, once you authorize your new computer with your id, it will copy all apps for you from your iPhone.

And for your music, you can download music from itunes but it will not copy from your iPhone. so no luck over there.
 
Yeah, you can't move DRM protected tracks back over. You can try, but most likely the music library is going to be wiped from the phone when you plug it in
