I tried it and almost every site I usually visit seemed to load the full desktop version. The two exceptions I found was NBC.com and Gmail. Gmail did have a link at the bottom so I could go to the desktop version, but it still wasn't the full desktop version, since it didn't have the chat feature. Anyone know if the gmail chat feature is supported on the ipad? I'm not sure what type of plugin is used for that.

I'll have to take a pass as I don't use Google mail. However I would be surprised if they had to use a plugin for chat. Plain in-browser AJAX should be able to do the trick.

I've had a quick look around at a few sites that I remembered having mobile versions and the mostly the full site is displayed. This included MacRumors, TUAW, Engadget and iPadAlone :)

The one exception so far is Google Reader; going to http://www.google.com/reader takes you to the mobile version which looks sort-of-OK in portrait. Interestingly going to http://www.google.com/reader/view on my iPod Touch takes you to the normal interface. However this doesn't work because you can't scroll the list of articles and I imagine it won't work on the iPad either. Hopefully they've got something in the works to improve this.

If anyone else wants to try it in Safari it appears that changing the user agent only effects the current tab of the current window. If you open a new tab/window you need to change the user agent again.

Weird, last time I checked Google reader using the normal URL on the simulator I got the full version.

Anyway you can scroll by doing two fingers swipes on both the iPhone and the simulator. Note that this trick also works on scrollable text fields like the one I'm typing this message in, as well as other embeded scrolling elements.
 
There exist legitimate ways around this on the iPhone already, so I'd expect the same on iPad. The web browser, "A Perfect Browser", for instance lets you report your user agent as any browser you want. I leave mine set to Desktop Safari because as a general rule I hate mobile sites, especially the ones that don't let you bypass and go into the full site.
 
i have installed iphone sdk 3.2 beta 5 and use the ipad simulator to try several sites, many are good, some not.
for example, gmail, give me a "keep refreshing", seems it's struggle to get the right version, so finally i given up because i can't even log in.
reader.google.com, give me a mobile version like iphone.
docs.google.com, it's just like a desktop version, however, it's very very hard to edit, when you use mouse to double like, it's scale up or down, when you single click, nothing happen, if you click and hold, nothing happen.
meebo, just like docs.google.com, a desktop version but can't click on your contact to start a conversation.
I think, many sites has too figure out how to identified a multi-touch device like ipad whose UA also require a desktop version of the website and give a proper response.
 
But i prefer Google Chrome as it is much better and faster at loading websites and has more features then Safari.
