I recently bought VMWare Fusion, but have not installed it yet, because I am concerned that Leopard (10.5) may include "Unity"-type functionality.

Is this an unfounded concern? I have not seen anything that indicates Leopard will carry such a feature, but I may have missed something.

The only multi-platform kinda software that will come with Leopard is Bootcamp, which allows you to boot into different OS's... not run them simultaneously. So, if that is what you want, you are fine using VMware.
