Will reformatting my version 1.1.2 iPod Touch restore back to 1.1.2 or will it automatically add the new 1.1.3 which I do not want??

using this method:

1) Exit itunes.
2) With the touch plugged in, hold sleep and home button until it shuts off, but KEEP holding them until the apple comes back on.
3) When you see the apple, let go of the sleep button but still hold the home button until the “connect to iTunes” screen appears.
4) Then, start up iTunes and it should recognize that your ipod needs to be restored.
 
Hey,
When you reformat an iPod, the firmware is left on it, even if you have to reformat the iPod as a result of a computer reformat. I have a feeling iTunes will update your firmware automatically when you reformat the iPod, but i may be wrong.

As for your method, I have no idea!

yes, it will update to 1.1.3, IF you have Itunes7.5 or earlier, you can shift+click (windoze) or option+click (mac) and select the restore package you want

Spot on. If you just hit Restore then it goes to 1.1.3, else, Opt-Click/Shift-Click and point it to another restore image
