I am about to restore but it says latest version of iPhone software will be installed as well as all data being deleted.

Does the software mean that it will no longer be 5.1.1?
I downloaded Absinthe for 5.1.1 so if after the restore it is upgraded, I don't think it will work.

Depending on which device that it, it will restore it to the latest version of iOS or the latest version it supports. What iOS device do you have?

Restoring will always force an update to the latest signed version for your device.

Not a big deal if that signed version is jailbreakable. A very big deal if it's not.

I have iPhone 4. (The very first one that came out I believe) and currently 5.1.1 is installed.

Ok, so since I am using 5.1.1 right now it will update it to that (or rather stay at that?)

No.

What everyone is telling you should be read at face value because it's what we mean.

If you restore your phone via iTunes, iTunes will force your phone to update to iOS 7.1.2 which is the last version of iOS that the iPhone 4 is capable of running.

If you had an iPhone 4s you would be forced to iOS 8.3.

If Apple is not signing a version of iOS you cannot restore to that version. Apple stopped signing iOS 5.x years ago.

However, you have two things going for you depending on your circumstances.

First, iOS 7.1.2 is jailbreakable. So, if you restore and are updated to 7.1.2 you can still jailbreak.

Second, the iPhone 4 is the last modern iPhone than can actually downgrade. That is achievable through a bootroom exploit that was closed with the 4s. The kicker here though is that you will have needed to have saved your SHSH blobs for iOS 5.x in order to downgrade.

Now, the above is the general information I have on this. Someone else would have to walk you through it as I have zero experience in doing that.

I hope that answers your question.

Actually, since the OP owns an iPhone 4, he can use iFaith to "dump" the blobs for the current iOS version the device is on

So he can always just re-restore to 5.1.1, even if cydia doesn't have his device's blobs

Can you even go back to the first iOS that the iPhone 4 came with? That's what I want to do because it became really slow after an upgrade to a certain iOS.

Yes, if you have blobs saved for that iOS version

I think I might have it saved in some old laptop … In fact I think I took the hard drive that had the blobs and replaced it with an SSD and I don’t know where I put the hard drive. I think the hard drive actually might have failed which might have been why I replaced it.

Check if cydia has them

Can someone check Cydia for me to see if there are blobs? I would go back to the very first iOS that came with the iPhone4, which I hope will make it fast enough for everyday use.

You have to check for your own device.
Every device is unique and you cannot use someone elses blobs to downgrade.

So I have to upgrade to 7 first to jailbreak so that I can use Cydia to figure out whether Cydia for my device will have the blobs? And what if it doesn't? I can't go back? If it does have the blobs will it have for the first iOS of iPhone4 as well as 5.1.1?

No, you can just use tinyumbrella to find out what shsh blobs you have available.

Is it possible that you have shsh blobs available even if you don't have any previous backups of the first iOS of iPhone4?

Cydia used to save them. You can save them using ifaith, tinyumbrella or redsnow.
And have them available locally or uploaded to various servers

However you said "Every device is unique and you cannot use someone elses blobs to downgrade."

Doesn't that mean even if people uploaded the blobs to various servers it wouldn't work on mine?

How could it have been uploaded when i didn't upload it? Do certain percentage of iPhone4s use the same blobs?
