In the interests of easy returnability (in the event of problems), I decided not to get my MBP custom-built with a 7200RPM drive. But I'm pretty sure, since this is my only machine for the next year or so, that I'll want to upgrade to a 7200RPM drive.

Will the in-store techs/'geniuses' do an upgrade of that sort? Any idea of the cost?

I don't believe they do. Your best bet is to call your local store and ask.
 
An independent Apple dealer will, for a labour charge. They will charge more for installing a drive you provide, as opposed to if they are installing one you buy from them.
