Just the X and SE for now. Apple.com still lists the 7 and 8 and therefore still selling them. I did notice that Apple has discontinued the Jet Black of the iPhone 7/7Plus.

No it will not, and yes, those are discontinued.

I got a 6S+ refurb yesterday when the broke mine while replacing the battery. Both 7 models have been available as refurbs on the site for a year.
