I purchased the 256gb SSD, but I'm thinking to stick in a 750GB data drive - either the Seagate Momentus or the WD Scorpio Black.

I've seen a couple threads about people sticking their old optibays into their new 2011 MBPs already. It should be fine, and iFixit seems to confirm this, as the optical drive they pulled out looks just like the older ones.
