Keep Resolution at 2880x1400, and adjust the DPI (Control Panel > Display > Set custom text size). It gives you several percent options, but you can also type in a percent number you like. I'd start at 200%, then adjust up or down as you prefer.

Good tip! I'll try it. I saw that option and I adjusted it down to 150% when I was a 16,9 aspect ration. I'm surprised there isn't an option of 1440x900 option in Windows 7.

There should be. I have the option of 1440x900 for my desktop. Perhaps you need a more up to date graphics driver provided by Nvidia?

...I dunno... I'm using Windows Home Basic. Does that have anything to do with it? I'm hoping it'll run games. That's all I need Windows for.

Ah, the silly number of Windows 7 editions. That always frustrated me about Microsoft. Anyway, it shouldn't make a difference when it comes to screen resolution. The possible resolutions should come down to what driver can do, not Windows. (Correct me if I'm wrong anyone?).

Windows 7 Home Basic should run all your games fine.
 
I was thinkings Windows 7 until I heard Windows 8 can boot from UEFI :].

Windows 8 was clearly made for a tablet, so I'm not sure how well it will run on anything else, so maybe Windows 7 will be better but I hate BIOS emulation.

Why do you hate BIOS emulation?
 
You can get the OEM version, the only problem is that if you want to use it on Boot Camp then you want to use VMware or Parallels on your Boot Camp partition it will give you a problem with activation.

You could try to boot Windows 8 through EFI using rEFIt.
