Any recommendations for running Windows on 2021 MBP with M1?
Needing to run some window applications and software for work.

I’m not too tech savvy so What does ARM mean?
Do I need to Bootcamp it?
Windows 10 or 11 ?
32 vs 64bit?

How much memory should I partition for Windows?
Etc, etc.

There's no bootcamp available. It's a totally different type of processor that's not compatible with intel processors.

You can't run x86 or x64 Windows with any decent speed and the setup is hard and not very reliable. (emulation using UTM)

All you can do is run parallels and Windows on Arm, but you can't really license that, so if you might be subject to software audit, it's best to buy a cheap Windows PC and use that for what you need for work.

What they fail to point out is that running the ARM version of Windows on an M1 Mac is not supported by either Apple or Microsoft.

During that M1 prelease presentation in NOV 2020, that tall grey apple dude claimed the chip would "even run windows"
with ipad app, only theirs tho....
what a lying sack of apples!
