Wipe phone and keep iOS 5?

Is it possible to do one of those iphone resets that wipes all information but does not force an upgrade to ios 7?

I'm thinking of selling my phone (4s) and would rather sell it with ios 5 loaded.

1. Why would you not want to sell it with iOS 7?
2. Sure. Go to settings -> general -> reset -> all content and settings.
