With my iPhone6s, I took a photo of my merchandise in brightest spot of my office at noon. Using all available light source and Shutter app (with Shutter's flashlight and flash on) the photo nonetheless came out dim and shadow-y. Barring filters and changing location/angle, how can I make colors appear more vibrant in photos? I've also tried taking photo with iPhone6s' own camera (with flash and High Def on) only for it to turn out worse than my attempt with Shutter.

Invest in a decent camera apps that lets you adjust various settings. ProCamera or Camera+ are some just to name a few.
