word spell checking

Although Word (2004 vrsn 11.2) will spell check in some areas of my documents, it generally refuses to spell check in other portions.

I used to go to tools and pull down to language - I always had to reset to US english and then it would spell check - now I notice I don't have the language option under tools.

Does anyone know how to get Word to just spell check everywhere in a document ?

as an aside, how oh how did word ever become the leading text software - it seems to have been designed by a committee.
