Word wrap in Mail

Has anyone worked out how to get Mail to word wrap text by default?

Having to scroll off-screen to read or write a message (on an iPhone 7 with 10.1) is not the future we were waiting for!

But my emails are wrapped. No problems here.

This has been a randomly occurring problem for me for years. I'm not sure how to duplicate it other than that I think it always happens in a reply and not a new email.

Yes, it only happens in replies.
