So I use my S4 watch everyday to track strength training (5 days) and indoor cycling (4 days). My simple question is how can I go back in the health app on my iPhone to see what I did for the day? I see all the data points that were tracked (heart, kcal, etc) but not that it was associated with a certain workout. Am I making any sense?
 
Go into Activity and check the activity for the date in question. I've mentioned this before but since you're asking, I have found HealthView to be a superior alternative to Apple's Health App. It makes seeing all of the statistics by a specific day significantly easier.

Thanks. It’s really buried but I found it under Workouts->Show all data

would be nice if Apple created a workouts tab and just place all them there.

There is a Workouts tab. It's the middle tab in the bottom row of the Activity app (not the Health app). It lists all your workouts, and you can view by time and filter by type.
