But I will admit that the thought of Vulcan (three dimensional) chess did intrigue me at one stage.

I never played 3D chess... one day I'll try.
I tried Chess960 (pawns set up as usual; pieces are still mirrored but set up randomly) and it's a lot of fun... yet a nice headache since you can't really prepare much as you never know what you're getting on the chessboard.
 
For the record, Magnus Carlsen is the 2016 Chess World Champion.
