I'll be traveling to Scotland for a few weeks in July. From what I understand, all I need is a SIM from one of the carriers(EE). Will I be able to just pop my VZW sim out and pop the EE SIM in and be good to go? If not, what will I need to do?

What device do you have?
As part of an agreement between the FTC and Verizon, all of their LTE devices must be unlocked. You should be good to go on a 5/5S.
