Looking to get a slightly better monitor for my Mini (currently using a 24 inch full HD one).

I’ve seen some very reasonably priced 2560 x 1440 QHD 24 inch ones, but I wondered at that size and resolution would the text look retina sharp, or would I need to go up to 4K ones for that..?

QHD would be retina at ~13”
4k would be retina at ~21”
According to the screens Apple has made. If you want high dpi on the QHD monitor you would need to drop it to the screen space of 720p
 
Ah okay, thank you. TBF a basic QHD screen isn't that much more, so I might as well go for one of those! Though they all seem to be 27 inches so won't be "retina" but will hopefully be an improvement on my 24" 1080p monitor!

In general screen resolution gives you two things. More screen real estate - that is more points on the screen so more logical spots any element can be on and thus more space. And more clear, sharp content. For ui elements it’s a bit of a trade off and the more pixels are used to represent 1 logical point the sharper it looks. So running in high dpi modes or “pixel doubling” will reduce your screen space but increase clarity. By default with a 24-27 QHD screen it will run in 1:1 so for ui elements it won’t be clearer you can just have more of it on screen at once. Images, videos and other media will always iust use all the pixels available in their viewport so will benefit from clarity relative to viewport resolution. For 27”, QHD is a good 1:1 resolution
