Would you get AppleCare for a 2015 MacBook Pro?

I would guess it would depend on the date of purchase. If he found an authorized retailer that had an unsold 2015 MBP it might be possible since most warranties start on the date of first sale. OTOH, if it was an open box returned item, then the warranty would have long ago expired since it started on first sale. For example, I bought an open box iMac from Best Buy and it had 10 months left on the warranty since it was first sold 2 months before I bought it.

Correct, AC is based on original date of purchase, so you could certainly still add AppleCare to a mid-2015, as new ones are still floating around.
 
I bought my laptop using an American Express card. They give you a second year of coverage automagically. I don't see spending a lot of $$ for one year of coverage over the 2 years I now have.

Also keep in mind that Amex adds its one year in addition to Apple Care. So a Mac purchased with an Amex and has Apple Care has a 4 year warranty instead of a 3 year warranty.

'Are you sure? last time I read the T&Cs it appeared to only extend the warranty from date of purchase, not add another year on to any extended warranty.

I am very sure. Amex terms considers the warranty length to be factory warranty + any extended warranties. The do limit certain purchases, like computers, to need an OEM extended warranty to have the extended warranty count.

Of course, you should read the terms for your card as I don't know how much they vary by card.

The two important parts are:

Length of Coverage

Where a Loss has occurred during the Extended Warranty Period, We will provide a benefit equal to the coverage of the original manufacturer's warranty on warranties of up to five (5) years.

If the item is also covered by a purchased service contract, the Extended Warranty Period begins at the end of the purchased service contract and extends the original manufacturer’s warranty for a period of time equal to the warranty, up to two (2) additional years.

If the combined coverage of the original manufacturer’s warranty and the purchased service contract exceed five (5) years, the item purchased is not eligible for benefits under this Plan.

And this exclusion that requires it to be an OEM extended warranty for computers

10. additional service contract or extended warranty coverage for a computer, computer component or part
that You buy which already comes with an original United States of America, Puerto Rico or the U.S. Virgin Islands manufacturer’s and/or retailer’s warranty, unless such coverage is provided and administered by the original manufacturer; and

I think it is worth the time to check at Apple's support page, where you can check the warranty status of any Mac.
THAT'S the place that can help you decide if it is worthwhile trying to add AppleCare.
You might have been told that a "new" 2015 MBPro is only 3 months old, but the Apple support page can easily verify that your Mac is still eligible for coverage within the 12 months after original purchase.

Apple warranties are based on purchase date. Even if your machine shows expired warranty because it sat in a back room at micro center for a year. Apple will correct that site once you send in your receipt.

So it isn’t definitive unless you are buying secondhand.
