I know it sounds silly but curious how many would switch from Spotify/Tidal or join a new membership to Apple Music just because Apple offered a dark theme in the “Music” app instead?

I have both but Apple Music is my main driver. Spotify is for background music when I‘m on the e.g. PS4.

Out there...way out there
There's way more to a music streaming service than just a silly theme.

For starters, all my home receivers and BluRay players support Spotify out the box which means I have my music wherever and whenever I want. At work I can do the same if I desire through a web browser.

Functionality here beats form for me.

I switched from spotify to apple music. i used a tool to move my playlist between those services. Was MusConv, pretty fast and easy to use. it's perfect for you if you want to keep all your music information in both music streaming services.
