Wrong default APN

Recently changed provider on an iPhone 8, but the phone randomly reverts to the old APN setting every now and then, which of course doesn’t work anymore. Also, resetting mobile data settings resets to the old one. Suggestions?

You could back up your phone, reset, and perform a restore without the sim card in the phone. Perhaps this will help.

Sure, but I was trying to avoid this.
