Hello, I am a graphic designer and I only use my mac pro for basic surfing, watching movies, and obviously working at home when I have to. The only apps I use all the time are the adobe cs2 suite, and studio 8...I rarely use (but still do) 3d apps. I don't play games, nor do much video editing. Is there any other benefits to me using the 1900xt as opposed to the 7300 stock card? If not a gamer or 3d guru, is there really any reason to use this card over the stock?

I would second that. I got the x1900xt for games and Motion. You don't need to spend the extra $$.
