I just recently downloaded and installed XCode and was wondering if this thing "X11" I'm finding in my utilities folder is it. I can't find anything in my applications folder that explicitly says "XCode" unless it's the installer and I've already finished installing it... so does anyone know if X11 is what I'm looking for?

X11 is unrelated to Xcode. It's sort of an X-server within Aqua, I believe. It mostly used for UNIX apps that have a GUI, but the GUI was never ported to OS X, just the app. You can find Xcode within the new /Developer folder on your hard disk, along with a bunch of other stuff.
