I also didn't like the look of true tone on my M5, so I turned it off. I do have true tone on with my 16 Pro and it doesn't seem to bother me as much or it just isn't as severe a difference.Update: with True Tone switch off, it’s now looking better than my M1 Pro. Also no more motion blur when scrolling.

I'm glad to see this post, as I was getting frustrated with my eyes and M5 IPP. It certainly looks more yellow or warmer on the new screen with TT turned on. For me, turning it off is too blue, but I may be questioning my sanity. Even before turning it on for the first time, I stuck a Paperlike on the front. I wasn't sure if it was the PL or screen and I'd hate to take it off. They're expensive!Just setting up my M5 pro and noticed how the screen isn’t as white as my M1 Pro that is sitting next to it. My M1 is paper white. I gather this is a common thing on the oled iPad screen?
I will most probably end up turning True Tone off on this one.

Did you try the reference mode? (Under display & brightness > advanced)
Did you notice any difference with the mura (grainy appearance) on the M5 compared to your M4? I take it that the Samsung panels are probably more likely to have less mura than the LG panels?I have it too on a 13" M5 and I'm returning it. It's a confirmed LG display and my 11" M4 is a Samsung panel. From what I remember, the majority (all?) 13" models are made by LG, but this go-around, I just happened to get one from LG that was extremely green tinted and very unattractive to my eye. I have had a prior 13" M4 by LG that was quite nice, so they are out there. I legitimately could almost tell the moment that I set it up that I wasn't pleased with the unit I got. I may try to get one later down the line near the holidays when production has matured a bit. I tried to capture a photo, but it has to be seen in person-- I'll be the first one to admit that I am picky about panels, but yuck, and we should be allowed to be picky when the 1TB model taxes included is over 2k. I have a M2 12.9" with the Mini-LED display that looks great to me, so I'll be hanging onto that in the meantime.
I noticed SOME, but only looking really closely. It seemed to be fine regarding text sharpness, the same as my 13" M4 was, but the tone was just not quite right. Also, the viewing angles on my 11" Samsung panel M4 were a lot better; again, just not taking on that greenish hue when sat on a table and viewing it from a bit away...I did take a couple photos, so I'm wondering if it is even possible to see it with them; so might as well upload em-- but yeah, just wasn't happy with it so I'm afraid to say that my testing period was rather limited as it went back into it's box quite quickly and is being picked up today to go back to Apple. :/ No worries though, that M2 is still a workhorse, and the M5 was definitely just a luxury for me at this point. I'll be back soon I'm sure haha.Did you notice any difference with the mura (grainy appearance) on the M5 compared to your M4? You can change the tint or hue, I think in the accessibility menu. I did it on mine to make it more cool tone and it looks much better. Out of the box it was a bit too yellowish for my liking. Is Apple dipping the OLED panels in food colouring or something during production?
